Foxeys Hangout offers visitors the exciting opportunity to join sparkling winemaker Michael Lee for a private tutorial in the final stages of making fine sparkling wine.

The finishing stages are known as disgorgement, dosage and corkage. Sparkling base wines that have already been fermented in the bottle, aged on lees and riddled are disgorged – that is, the bottle necks are frozen and opened and, in a sometimes dramatic moment, the deposit that has formed in their necks is popped out as a chunk of ice. A mixture of wine and sugar syrup, called the dosage, is added before the bottle is corked and secured with a wire muzzle.

Our sparkling wines are handmade to the highest standards; supply is limited and they are available only from the cellar door or direct from the Lee brothers on this website.

The intimate scale of the Foxeys Hangout cellar door allows visitors to observe disgorgement and select their own dosage. After tasting our house range of sparkling wines as well as a selection of sparklings “dosed” at substantially different sugar levels, you can determine how many grams of sugar should be added to your bottle, and select the base wines (chardonnay? pinot noir?) to “finish” the blend.

Sweeter? Dryer? White? Pink? It’s up to you to create the chemistry that’s perfect for your palate. Create your own, uniquely personal bottle to take home.
