A Portuguese lagar ('lah-gah') is an open stone tank for foot-stomping grapes. We made this special-release wine using techniques traditional to Portugal's Douro region, adding some stalks back to destemmed shiraz bunches, early bleeding of some free-run juice then a lot of foot-stomping maceration in shallow fermenters. The result is full-bodied with aromas of cinnamon and coffee.
