The vines are cut from the trunk in March allowing them to shrivel and concentrate their flavour, harvested seven weeks later in May, making this wine a great partner to rich, dairy desserts like panna cotta with poached stone fruit, or an Eton mess of meringue, vanilla cream and fresh berries.
